October is Vegan MoFo, the Vegan Month of Food! Vegan bloggers all over the world are committing to post recipes and share the love of veganism.
I secretly wish to be involved in the Vegan MoFo, but considering I have a hard enough time posting to this blog, I don't think I could keep it up! Instead, I'm committing to blogging daily for the month of October. In celebration of Vegan MoFo, foodie posts will sneak their way in! After all, you do need a healthy diet to fuel your body for your yoga practice! I encourage you to peruse some vegan blogs this month and check out the delicious recipes out there. My favorites are Fat Free Vegan, Vegan Yum Yum, and Isa over at The PPK.
I'll kick it off by and share a recipe from the Kripalu Cookbook. The protein from the nuts will stick with you and power you though an early morning asana practice and energize you for your day!
2 cups rolled oats
1 cup rye flakes
1 cup chopped dried dates
1 cup raisins
1 cup whole almonds
1/2 cup whole walnuts
1/2 cup sunflower seeds
1 tsp vanilla extract
1/4 tsp ground nutmeg
1/2 tsp ground cinnamon
4 cups apple cider
In a large bowl, combine all ingredients, except the cider, and mix well OR mix all the dry ingredients, and add 1/3 cup apple cider to a heaping 1/2 cup of muesli for each serving.
Place the mixture in an airtight sealable container and stir in the cider.
Refrigerate overnight and serve in the morning. Can be stored in the fridge for several days.
